Sanitas Brewing Company, with a new taproom located in Old Town Lafayette, is known for its craft beer and strong dedication to community and creativity. Founded by Michael Memsic and Chris Coyne, Sanitas Brewing Company has already become a fixture in the Boulder area, and now the founders have brought their delicious beers, craveable coffee, and local eats to Old Town.
The Vision Behind Sanitas
When Michael Memsic and Chris Coyne first dreamt up Sanitas Brewing, they had a clear vision: to create a brewery that wasn’t just about beer but about building a community. “We have a long-term vision and focus for multiple locations throughout the West,” says Michael. “But more importantly, we want to create spaces where people can gather, make memories, and feel at home.”
Their vision is clearly displayed in every aspect of Sanitas, from the design of their taprooms to their approach to hospitality. For Michael and his team, it’s not just about serving a great beer—it’s about creating an experience. “We’re not big in production like some of the larger brands,” he explains. “Our focus is definitely on the experience and hospitality of our spaces.”
Building Community, One Pint at a Time
Sanitas Brewing Company’s commitment to the community goes beyond just creating a welcoming atmosphere. The brewery is deeply involved in charitable activities, ranging from supporting local schools to environmental conservation efforts. “We’ve been fairly involved with the Boulder Open Space Conservancy, which funds restoration projects, including one at Mount Sanitas,” Michael shares.
These efforts are not just about giving back—they’re about building lasting relationships with the community. “We want to create spaces where people can gather and make good,” Michael emphasizes. This philosophy is central to Sanitas’ identity and is reflected in everything it does.
The Importance of Family and Connection
For Sanitas, creating family-friendly spaces is a priority. “On Saturday, for the grand opening, there were 50 to 75 kids, probably all under six, playing in the grass,” Michael recalls smiling. “We are not in the business of selling alcohol to small children, but we are in the business of creating environments where families can come together to enjoy their community.”
This focus on families sets Sanitas apart. Michael, a father himself, understands the challenges of finding spaces catering to adults and children. “We created spaces where you can do that,” he says. Whether during a weekend afternoon or for a special event, Sanitas Brewing Company offers a space where everyone—young and old—can feel welcome.
Looking Ahead: Expansion and New Ventures
As Sanitas Brewing Company looks to the future, expansion is on the horizon. Michael mentions that Sanitas is exploring new locations across the Rocky Mountain region, and maybe even in the future, including parts of Montana, Arizona, and Idaho. However, the approach to expansion is thoughtful and intentional. “We cast a really wide net, and we’ll see what falls into our lap,” Michael explains.
But even as Sanitas grows, the focus remains on maintaining the same level of community engagement and quality that has made it successful. “Our goal is to keep adding locations, but each one has to be as special and welcoming as the last,” Michael insists.
Sanitas: Hustling by Day and Brewing by Night
Sanitas Brewing Company is more than just a brewery—it’s a hub for community, creativity, and connection. From their family-friendly spaces to their charitable initiatives, Michael and his team are proving that craft beer can be about much more than just what’s in the glass. As they continue to expand and evolve, one thing remains constant: their commitment to creating spaces where people can come together, enjoy great beer, and feel part of something bigger.
